Really f*cking good cookies.

A cookie is a special thing, I thought, as I pulled a sheet pan from the oven. If something bad happens, you have a cookie to forget. If something good happens, you have a cookie to celebrate. And if nothing happens, you have a cookie to make something happen.

I started baking as a young boy with my mom and was always impressed by the way she could call for ingredients without looking at a recipe, and her seemingly endless patience as I spooned dough into my mouth. But I was always more impressed with the end result; a perfectly chewy chocolate chip cookie that was universally loved.

I've taken what I learned then and have been perfecting these recipes for years, endlessly taste testing them myself and with eager friends, and I finally feel confident that this is about as good as a cookie can get.

preheat to 350 degrees. room temp ingredients. use a scale. organic is always preferable. don't melt your butter. add eggs one at a time. get an oven thermometer. whisk flour, salt, baking soda, and nonfat milk powder together. slowly incorporate into dough. keep in refrigerator overnight. be nice to the people at the grocery store. use a good mexican vanilla. experiment with the ratio and types of sugar you use. nothing wrong with adding more chocolate chips. bake for 12ish minutes. cool on a wire rack. be weary of people that don't enjoy homemade cookies.
